A generous blend of tart pomegranate juice and the sweet rolanberry finish of Still and String's Free Paw Gin, awakened by the sweet-citrus of Cointreau and zest of lemon juice. Pomegranate seeds and a sprig of rosemary garnish this otherworldly delight. Sinners rejoice!

  • SWEET AND SPICY HIBISCUS SOUR — Sweet and spicy are perfectly blended in this hot take on a sour! Our Grenache rosé wine pairs its sweet apple with Still and String's juniper-forward Junebug gin, blending with the tartness of lemon juice and the sweetness of hibiscus simple syrup. Perfectly balanced with a Tural chile liqueur, this sour is sure to awaken your senses.

SPARKLING

  • BOOZY LAVENDER SANGRIA — Delight your tastebuds with this sweet blend of tangerine-forward Viogner wine, the Canto's own faerie apple Calvados brandy, the grand flavour of orange liqueur, and our homemade Althyk lavender syrup. Stirred together then topped with the effervescence of sparkling water, this light sangria is perfect for a spring evening with friends. Garnished with a sprig of lavender, and some fruit slices.

  • ST GERMAIN SPRITZER — Don't be fooled by this drink's simplicity. The sweetness of the elderflower liqueur marries the cinnamon and clove-heavy Campari in a beatific union, while the Canto's sweet and spicy Lambrusco Rosso adds in an entirely different layer of flavour. Garnished with cherries and mint leaves, this drink is best enjoyed with friends.

  • CHARCUTERIE PLATE — Famous Wineport cured ham, housemade sausages, and local cheeses are all assembled on a Noscean Oak slab, along with bountiful accouterments - including housemade jams and preserves, cornichons, dried fruit, sliced baguette, and a fougasse to share. Pairs well with most wines or cocktails.

  • SAMOSAS — Served in a woven Hannish basket, one of Rhaya's own recipes. Served with a spiced popoto filling with onions and peas, fried up in a thin pastry shell. Served with a trio of chutneys to dip. We would recommend a very full bodied white wine to pair with this, such as our Viognier, or even one of our medium reds - Malbec or Gamay.

  • GOUGERES — A favorite of Egrine’s; chou pastry is mixed with cheese and then baked up into puffs. A simple treat shared at a table - pairs very well with almost all of our wines.

  • SALMON TARTINE — A classic finger sandwich of garlic toasted sourdough bread, crème fraiche, house smoked salmon, and paper thin slices of cucumber. Garnished with fresh dill - served four to a plate. A drier white wine would pair best with this rich finger sandwich, such as our Muscadet.

  • STEAK FRITES — Grilled skirt steak is served up medium rare, sliced thinly and paired with crunchy fried popotoes. A La Noscean staple, pared down to a small plate serving. Easily shareable. Pairs very well with our Shiraz, or even the Widow Reserve.

  • STONEFRUIT GALETTE — Served hot tableside in a personal cast iron skillet, crumbly pastry shell is filled with fresh peaches and cherries, topped with a port wine sabayon. A sweet finish to your night at the Ledgermain. We recommend a glass of the Snowcloak reserve for this dish, or even a nip of Calvados to bring a little tart sweetness to the party.

  • PEAR VANILLA GIN FIZZ — A refreshing twist on a classic, combining the Canto's own Matriarch gin with a fresh pear and vanilla syrup, and a splash of sparkling soda. This imaginative mixture offers a myriad of flavors, with hints of citrus, grapefruit, rose, juniper, and coriander from the gin, to the crisp warmth from the pear vanilla syrup. Garnished with a pear slice and served with a sugared rim. Start off the new turn in divine fashion!

  • WINEPORT SOUR —A classic whiskey sour with a vintner’s twist. Lemon juice, Buscarron’s Bourbon, and egg white are shaken into a frothy sour and served in a double old fashioned glass with ice. A float of the Canto’s own Shiraz adds a layer of dry red wine to contrast with the bright drink beneath. Garnished with a Maraschino cherry and twist of lemon peel.

  • THE FINANCIER — For those of you who want something a little more subtle, you may find more enjoyment in a cocktail made for our accountant’s palate. Cieldalaes White Rum, Dry Curaçao, the Canto’s Thanalan Dry blanco vermouth, and a dash of sangria are shaken together into a sweet, easy to drink cocktail. Served up in a coupe glass and garnished with a twist of orange peel.

  • FUOCO E SANGUE — An otherworldly drink made with our new "Ruby Tithe" carmine amaro. This sparkling cocktail combines Ruby Tithe with our Antica Rosso vermouth and a splash of sparkling wine. Served up in a champagne flute with a twist of orange peel, you'll be asking for it everywhere... with Prosecco!

The Palazzo Aldenard once sported a great many old rooms, unused for quite some time. One such dusty room was a small lounge bar on the formerly blocked off second floor of the building. One of the first rooms to be renovated, and serves now as the home of the Canto’s own Ledgermain Lounge.The Lounge features a Canto twist on several popular local cocktails, each featuring spirits from local distilleries, vermouth from Bel Canto Vineyards, and Wineport wines. We also feature a local menu of small plates and charcuterie, offering our patrons a true taste of the La Noscean Riviera.The Ledgermain Lounge at the Canto is our formal venue.Cocktail attire requested.

《 in the basement amongst the barrels is an old stage... 》

Tucked into the back corner of the Canto’s own wine cellarage is a little stage, surrounded by barrels, racks of wine, and drums of distillate. It’s what remains of the Palazzo Aldenard’s former grand stage — an homage not only to the building that Bel Canto Vineyards now inhabits as its headquarters, but as a nod to the owners’ passion and former careers working in performing arts.Not ones to let things go to waste, Rhaya and Egrine decided the stage could be used as a home for performers from far and wide to offer a sampling of their art where the Vineyard bottles its own.I’m afraid you won’t find the Palazzo’s stadium seating around this stage, nor will you find the tables and chairs once famously used to seat the patrons of Tempo Rubato. This exclusive little venue is Standing Room Only.

  • DE NEVELLE'S RESPITE — Named after the Galadion's helmsman, Jean De Nevelle, this drink celebrates the history and dangers of exploration Limsa Lominsa was founded on. While still a warming drink for cold nights, lime features strongly as a nod to the dangers faced by our Sailors - mixed with our own rich Navigator's Gale amaro, Cieldalaes Rum, lime juice, grenadine, and De Nevelle Bitters, this drink should give any explorer the respite they need.

Tall

  • HIGH ELEVATION — This lovely winter favorite evokes the snow cap that forms around the rim of O'ghomoro in the dead of the La Noscean winter. Local Wineport Sherry wine is shaken with a housemade nutmeg spiced syrup and egg whites to make a creamy, snowcapped delight that satisfies a patron looking for something with low alcohol. Bright, fruity sherry and nutmeg reminds us of Starlight pies! Served in a Copita glass with a dash of nutmeg.

Up

  • SHORE LEAVE — Local La Noscean rye features in in this cocktail, with a dash of dry orange curacao, and our house Fernet-Palazzo amaro. A bitter, bracing cocktail not for the faint of heart - crafted with the thoughts of Maelstrom sailors in mind, on holiday shore leave in a far off port, looking for a reminder of home. Served in a Coupe glass, with a twist of orange peel.

  • VINEYARD FROST — A house favorite, this wine sour has a creamy, rounded palate with a berry finish that reminds of rolanberry jam brought up from the winter larder. Canto Ruby Port is mixed with La Noscean Rye, lemon juice, and demerara syrup, and shaken up.
